Simple Gluten Free/Vegan “Dessert”/Snack

Post long run and swim brought on this little concoction late this afternoon:

All you need:

  • Lundberg Brown Rice Cakes
  • Enjoy Life Mini Chips
  • almond butter
  • unsweetened coconut

Spread the almond butter on top of the rice cake, and add chips and coconut.  Simple, easy, and good.  Enjoy!
